Of course, all that trapped gunk builds up, so you need to regularly clean it out and get rid of the waste properly for the environment's sake. How well a grease trap works depends on a lot of things – its design, where the kitchen is, the plumbing, its size, and even how you cook. It really varies place to place. Usually, a simple grease trap catches around 50% to 90% of the FOGs that go in. Most restaurants just have a single-chamber trap.
