We used the right balance of nutrients from these, from legumes and cereals, to make some ready-to-eat options. We carefully planned each recipe to have about 15% of its energy from protein, 60% from carbs, and 25% from fat, all while keeping an eye on the protein quality, saturated fats, and added sugars. For carbohydrates, we went with rice flour, brown rice flour, and mung bean starch – and tests showed rice flour was the easiest to digest. To get the protein and healthy fats, we chose soybean flour, black sesame seeds, and rice bran oil.

Phytic acid is synthesized from myo-inositol by a series of phosphorylation steps; therefore, it consists of an inositol ring with six phosphate ester linkages. Phytic acid is the primary phosphate storage compound in seeds, typically accounting for 50–80% of the total phosphate content of plant seeds. It helps effectively control germination, allowing for increased P-phytase release from leguminous phytase digestion after germination. Phytate P is poorly available for cereals and legumes and due to its anti-nutritional effect, it can reduce the abilities of other nutrients and the performance of such plants.
